Niamh Fox brings her unique inspired whole-hearted cooking to Ennistymon. Her latest venture, Little Fox, will serve delicious locally grown food, intertwined with the natural rhythm of the season, cooked with heart and flare.

The Beginning


Niamh Fox started cooking at age five, helping her mother and father prepare meals for their family, her calling starting to simmer.

Niamh went on to train GMIT Galway at just 17 and has since cooked alongside a host of well known names, including Aoibheann McNamara (Ard Bia, Galway), Denis Cotter (Cafe Paradiso, Cork), Margot Henderson (Rochelle Canteen, London),  Jess Murphy (Kai, Galway), Katie Sanderson (Dillisk, Galway), Ted Burner (Ballymaloe, Cork), and Cliodhna Prendergast and Imen O’Donnel (Lens and Larder, Limerick). 

Niamh has since been hosting pop up restaurants and festival events around Ireland, but more recently moved to county Clare to start a farm and family with her talented furniture designer and knife maker husband Sam Gleeson of This Is What We Do.

The duo combine talents creating a thriving smallholding, growing enough to eat and share, keeping pigs and hosting visitors in various long table dinner evenings.

And then little fox was born...

Little Fox is a culmination of Niamh's many years of happy kitchen experiences and husband Sam's innovative passion for design.

Little Fox sources local, organic and seasonal produce with a menu that changes with the seasons harvests. 

Little Fox believes in local food thats naturally beautiful and fresh, nourishing and powerful, intertwined with the natural rhythm of the season, and cooked with heart and flare.

There is no artificial colouring, flavour or preservatives in any of the food we serve. Gluten free, sugar free, dairy free, vegetarian and vegan options available.
